Recipe: Andi’s Mexican Rice
Ingredients
- 1 (8oz) can- Hunts tomato sauce
- 2 cups white long grain rice
- 3 ¾ cups water
- 3 Tbs Ground Cumin
- 2 Tbs ground black pepper
- 2 Tbs vegetable oil
Instructions
In a large deep nonstick sauté pan on medium-high heat 2 Tbs of vegetable oil. Add the rice, cumin and black pepper and sauté for 7-10 minutes until rice is just starting to brown and stir often to prevent burning. Then add the tomato sauce and sauté for another 3 minutes to intensify the tomato flavor. Add the water and bring to a boil, cover and lower the heat to a simmer and cook for 20 to 25 minutes.
