Recipe: Tracy’s Meatless Gravy
Ingredients
- 6 (28 oz) cans of tomato sauce
- 2 (28 oz) cans of crushed tomatoes
- 12-15 garlic cloves, sliced thin
- 3 large yellow onions, chopped fine
- 1/3 cup olive oil
- 3 Tbs tomato paste
- 2 Tbs dried oregano
- 2 Tbs dried parsley
- 1 tsp garlic powder
- 1 tsp crushed red pepper
- 2 large bay leaves
- 1 ½ tsp fresh ground black pepper
- 1 tsp kosher salt
- 1 Tbs granulated sugar
- 1 tsp baking soda
- 1 ½ cups water –minimum; add as cooking continues
Instructions
In a large stock pot add the olive oil and onions. Sauté the onions for 20 minutes on medium-low heat and do not allow the onions to caramelize. Rather, the onions should sauté over a slightly longer period of time on slightly lower heat so they become very soft and translucent. Add the tomato paste and increase the heat to medium-high heat. Stirring often for the next 8-10 minutes allow the paste to intensify in flavor by turning dark in color but don’t allow to burn. Add the garlic and stir constantly for 1 minute. Add the 8 cans of crushed/sauce tomato cans. Add the remaining dry ingredients: dried oregano, dry parsley, garlic powder, black pepper, crushed red pepper, the bay leaves, salt, sugar and baking soda. Add 1 ½ cups of water, give it a big stir to combine. Bring to a simmer and reduce the heat to low and slightly simmer for 2 ½ to 3 hours adding about ½ cup of water every 45 minutes. Check the seasonings after 2 hours and adjust if desired.
