Recipe: Grilled Grecian Chicken

Ingredients

  • 4 bone in, chicken breasts with skin
  • 1/3 cup olive oil
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 Tbs dried oregano
  • 2 Tbs fresh chopped rosemary
  • 1 tsp fresh thyme
  • 1 tsp dried thyme
  • 1 Tbs lemon zest
  • 1 whole lemon halved

Instructions

In a zip lock bag add1/3 cup of olive oil, salt, pepper, oregano, rosemary, dried and fresh thyme and lemon zest. Mix the dry ingredients in the bag together to incorporate and then add the chicken breasts and coat in the marinade.

Marinade the breast for 8 hours in the refrigerator and turning the bag over every few hours.

Preheat the grill. With the grill set to medium-high heat about 350-400 degrees, place the breasts bone down for 20 minutes and with the grill covered. Turn the chicken skin side down for 10 minutes covered. Slice 1 lemon in half and place on the grill sliced side down and grill for 10 minutes. For the last five minutes turn the chicken breast on its thickest side and grill. Check for an internal temperature of the chicken breasts to reach 165 degrees and let rest for 5 minutes and serve.
