Recipe: Basic Gravy
- 2 cups homemade chicken stock
- 8 Tbs unsalted butter
- 2 yellow onions, chopped
- 1/4 cup flour
- ½ tsp kosher salt
- ½ tsp freshly ground black pepper
- 1 Tbs brandy plus 1 tsp, divided
- 1 Tbs heavy cream
In a small sauce pan heat and keep hot the homemade chicken stock.
Meanwhile in a large sauté pan sauté the onions over medium to medium low heat for 20 minutes until lightly browned. Next sprinkle the flour over the sautéed onions and then add the salt and pepper. Use a whisk and whisk the mixture constantly for 2 to 3 minutes to cook the raw flour. Now add the hot chicken stock whisking constantly while slowly adding the stock. Then add 1 Tbs of brandy and whisk until the gravy is smooth. Continue to cook and whisk for 3 to 5 minutes until the gravy is thick and smooth, then turn off the heat, whisk in the cream and the remaining teaspoon of brandy and transfer to service bowl or small gravy boat.
