Sweet Potato Casserole

Recipe: Sweet Potato Casserole


  • 5 medium sized sweet potatoes
  • 1/3 cup orange juice
  • 1 Tbs orange zest
  • ½ cup heavy cream
  • ½ stick butter, melted
  • ¼ cup light brown sugar
  • ½ Tsp ground nutmeg
  • 1/8 Tsp all spice
  • ¼ Tsp ground cinnamon
  • ½ Tsp fresh ground pepper
  • 1 Tbs pure vanilla extract
  • Pinch of kosher salt


Preheat the oven to 375 degrees F

Wash and pierce the sweet potatoes and place in the oven on a parchment lined cookie sheet to bake for 1 1/2 hours or until they are soft. Allow the potatoes to cool and slice in half to remove all the inside flesh from the potatoes and place in the stand mixer.

Using the paddle attachment mix the sweet potato insides along with the orange juice, orange zest, heavy cream, vanilla, melted butter, nutmeg, cinnamon, allspice and salt and pepper until combined. Don’t over mix just mix until combined. Lightly spray a 9 in tart dish with cooking spray and bake for 30 minutes.
