Recipe: Rack of Pork with an Herb Crust

Ingredients

  • 1 (4-5lb) Rack of pork- frenched

        For the herb rub:

  • 1 ½ Tbs Kosher salt
  • 4 cloves of garlic minced
  • 1 Tbs fresh thyme, minced
  • 1 Tbs fresh rosemary, minced
  • 1 tsp fresh ground pepper
  • 1 tsp dry basil
  • ¼ cup olive oil

Instructions

Preheat the oven to 450 degrees F In a small bowl mix all the rub ingredients together and set aside. Rinse and pat dry the roast. In a roasting pan place the frenched rack of pork with tips facing up. Rub the entire roast with the herb mixture. Cover the tips with aluminum foil and bake for 25 minutes per pound rotating the pan every 30 minutes. For the first 30 minutes roast at 450 degrees F and then turn the temperature down for the remaining cooking time to 375 degrees F. When the internal temperature reaches 155 degrees F in the thickest part remove from the oven. Cover with aluminum foil and allow the roast to rest for 20 minutes before carving.
