Tortellini Salad

Recipe: Tortellini Salad

Ingredients

  • 1 (9oz) package of cheese tortellini
  • ½ cup of good olive oil
  • 1 ¼ cups red wine vinegar
  • 2 tsps dry parsley
  • 1 ½ Tablespoons dried oregano
  • 1 tsp kosher salt
  • ½ tsp fresh ground pepper
  • 6  eggs
  • 1 cup crumbled feta cheese
  • ½ cup sliced red onion
  • 4 hearts of romaine lettuce

Instructions

To make hard boiled eggs, I’ve found the best way is to steam them. In a large saucepan fitted with a steamer basket, I add enough water to just come below the steaming basket. There should be about 3 cups of water. I add the 6 eggs; cover and turn on the heat to medium-high. Start with the eggs in the steamer so they begin to warm as the water heats and it begins to boil. Once the water is boiling set the timer for 15 minutes and allow the eggs to steam. Once cooked; cool, peel and cover the eggs in plastic wrap and place in the refrigerator for at least 1 hour.

In a large pot boil enough water to cook the 9oz of tortellini. Salt the water when it comes to a boil and add the pasta. Cook to the specifications on the packaging. Drain and rinse the tortellini in cold water to stop the cooking and set aside.

Meanwhile, make the dressing: in a tall dressing container add the red wine vinegar, olive oil, parsley, oregano, salt and pepper and shake well. Add 1/2 cup of the prepared dressing to the cooled tortellini and place in a Tupperware to marinade the tortellini in the refrigerator for 1 hour. Reserve the rest of the dressing to serve with the salad.

Wash, dry and chop the hearts of Romaine lettuce. In four salad bowls arrange the salads by first placing a large bed of the hearts of romaine. Add some thin slices of red onion and sprinkle ¼ cup of feta cheese on each of the four salads.

Next remove the eggs from the refrigerator and quarter the 6 chilled eggs. Place 6 slices in each of the salads. Remove the chilled marinated tortellini from the refrigerator, all the liquid should be absorb. Evenly distribute the tortellini among center of the 4 salads and serve with the remaining dressing.
