Recipe: Andi’s Stuffed Baked Apples
Ingredients
- 1/4 cup brown sugar
- 1 tsp lemon juice
- 1/4 cup currants
- ¼ cup yellow raisins
- 1 teaspoon lemon zest
- 1/2 cup chopped pecans
- ¼ tsp corn starch
- ¼ cup apple cider
- ¼ cup brandy
- 1 teaspoon cinnamon
- ¼ tsp ground nutmeg
- 4 same-size Granny Smith apples
- 4 Tbs butter melted
- 1/4 cup maple syrup
Instructions
Preheat the oven to 425 degrees F
Wash and core 4 granny smith apples using a melon baler. Make sure not to go through sides or the bottom. Using a small knife, remove just that cap of the apple to enlarge the opening a bit more and then slice the bottom just slightly to make a flat bottom but do not expose the opening to the bottom of the apple. Using a small knife, score a ring around the apple in the center horizontally but again do not cut though the apple. Next prepare the filling. Melt the butter first and add the brown sugar, lemon juice, lemon zest, cinnamon, nutmeg and corn starch. Mix well to incorporate. Then add the currants, raisins, and chopped pecans. Fill the apples with the filling and place in a glass square baking dish. In the dish pour the apple cider and brandy for the apples to rest in and then pour the maple syrup over the tops of the apples. Place the dish lightly covered in aluminum foil for the first 25 minutes and then remove the foil and continue to bake for another 30-35 minutes or until the apple begins to protrude through the scored ring around the apple.
