Recipe: Simple Greek Salad with Dressing


For the Salad:

  • 2 Heads of Romaine lettuce
  • 1 can of black olives or 20 Kalamata Olives
  • ½ lb block of Feta cheese
  • 1 seedless cucumber
  • 1 tsp dried oregano

For the Dressing:

  • ¼ cup extra virgin olive oil
  • ½ cup red wine vinegar
  • 1 Tbs dried oregano
  • 1 tsp dried thyme
  • 1 Tbs fine chopped parsley
  • ½ tsp fresh ground black pepper
  • ½ tsp kosher salt
  • 1 tsp fresh squeezed lemon juice


For the dressing: combine all the dressing ingredients in a sealed container and shake well for 30 seconds. Transfer to a dressing dispenser. Allow the dressing to fuse flavors for at least 1 hour before serving. Note: the dressing will continually separate.

To assemble the salad: wash and chop the lettuce. Wash the cucumber and slice into 1 inch cubes and add to the salad. Add Kalamata olives or black olives to the salad. Wash and add Cherry tomatoes to the salad. Cut the Feta cheese into 1 inch cubes and add to the salad and last sprinkle 1 tsp dried oregano to the salad as a garnish.

Serve chilled and with the dressing on the side.
