Recipe: Freshly Squeezed Grapefruit and Lime Margaritas
Ingredients
- 1 cup freshly squeezed Pink White or Red Grapefruit juice
- ½ cup freshly squeezed lime juice – reserve the used limes
- 3/4 cup Cointreau (orange liquor)
- 2 cups ice
- 1/2 cup Jose Cuervo 1800 white tequila (silver)
- 3 Tbs kosher salt
Instructions
First squeeze the grapefruit as well as the lime juice and strain through a sieve to remove any pulp and add the exact amounts of each of the juices to a blender. Add the Cointreau and the 2 cups of ice. Blend until smooth and no ice remains about 1-2 minutes. The mix will only be a little thick for a short time.
Next remove the mixture from the blender and pour into a pitcher and stir in the white tequila and mix well. Cover the pitcher with plastic wrap and chill for at least 1 hour.
To prepare the rocks glasses, rub the rims of the glasses with any excess lime juice from the reserved squeezed limes. On a plate add 3 Tbs of kosher salt, shake to make an even layer of salt on the plate and invert the lime rimmed glass on the salt to create a ring of salt. Set the lime rimmed salted glasses aside until serving.
To serve, pour the margarita mixture over ice and in the lime rimmed salted rocks glasses. Drink responsibly.
