Buttermilk Mashed Potatoes

Recipe: Buttermilk Mashed Potatoes

Ingredients

  • Kosher salt
  • 3 pounds Yukon potatoes
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/2 cup buttermilk
  • 1/2 teaspoon freshly ground black pepper

Instructions

Peel and quarter the Yukon potatoes. Bring a large pot to a boil add 1 teaspoon of Kosher salt and boil the potatoes for 15-20 minutes. The potatoes are ready when they are tender and slide off a fork when poked.

Meanwhile in a small saucepan warm the butter and the cream but do not bring to a boil and do not warm the buttermilk with this mixture. Remove the potatoes from the pot and drain well in a colander and transfer to a medium working bowl and add the warmed butter/cream mixture.

Lightly mash the potatoes in the butter cream mixture and once just combined add the buttermilk and whisk until creamy smooth. Add about 1 teaspoon of salt and 1/2 teaspoon of fresh ground pepper whisk to incorporate and serve hot.
