Recipe: Sweet & Spicy Pecans
Ingredients
- 1 cup sugar in the raw
- 1 Tbs kosher salt
- ¼ tsp cayenne pepper
- 1 tsp ground cinnamon
- 1 egg white, room temperature
- 1 Tbs water
- 1 lb shelled pecan halves
Instructions
First preheat the oven to 300 degrees F with the rack in the middle position.
Line a sheet pan parchment paper and set aside. In a medium bowl combine the sugar, salt, cayenne pepper and cinnamon using a large spoon to stir together to incorporate, removing any lumps and then set aside. In another medium sized bowl using a beater, beat the egg white and water together until foamy but do not allow stiff peaks to form. Now add the pecans in batches to the egg white mixture to coat evenly then using a slotted spoon, transfer the moistened pecans to the sugar/pepper mixture and stir to coat evenly. Shake all excess coating from the pecans and transfer in a single layer to the sheet pan lined with parchment paper.
Repeat in batches until all the pecans have been moistened and coated and transferred to a single layer to the sheet pan lined with parchment paper. Now bake for 25 to 30 minutes and rotate and toss the pecans making sure they remain in a single layer after15 minutes of baking.
After 25 to 30 minutes in total baking remove the pecans from the oven. Transfer the pecans to a counter lined with parchment paper in a single layer again to cool for 1 hour before packaging.
