Walnut Pear & Apple Salad with Walnut Vinaigrette
10 to 12 cups of washed mesclun salad mix
½ cup toasted chopped walnuts
1 small pear cored and sliced
Walnut Vinaigrette Dressing
1 Tbs Champagne vinegar
1 ½ tsp very finely minced shallot
½ tsp mayonnaise
½ tsp dijon mustard
½ tsp kosher salt
¼ tsp fresh ground black pepper
2 Tbs walnut oil
2 Tbs extra virgin olive oil
In a large bowl serving salad bowl combine the salad mix, chopped walnuts, apples and pear slices. Pour the dressing over and toss gently, serve immediately.
To make the vinaigrette, combine the vinegar, shallot, mayonnaise, mustard, kosher salt, fresh pepper, walnut and olive oils in small Mason jar. Shake vigorously for about 40 seconds until the mixture emulsifies.
