Recipe: Jicama Pineapple and Kiwi Fruit Salad
1 small jicama
1 ripe whole pineapple, skin removed and diced into 1” cubes
Juice of 2 limes
Using a vegetable peeler, peel the jicama and then dice it into 1” cubes and place into a large bowl.
Next add the diced pineapple to the same bowl.
Now peel the kiwi using the vegetable peeler to remove the skin and dice the kiwi into quarter circles.
Next squeeze the juice of 2 limes over the fruit and toss gently.
Cover with plastic wrap and refrigerate for at least 30 minutes and serve.
